this is certainly banaras ka khana as i had never heard of it till we shifted to banaras ( so many years have passed since then n some more years since i left banaras) .....banaras people are so obsessed with mithai and khoya ( evaporated milk) that they can have it all the time.
there is a khoya gali in banaras where only khoya is sold and it smells like khoya all over.........i do not like khoya much and feel nauseating whenever i go there......but there are people who will come back with a kilo of khoya whenever they will pass through that area........
no khoya gali here in Delhi and whenever i want to make my husband with his sweet tusks ( no tooth , he has giant sweet tusks...he he ) happy i have to think something of khoya.........
paratha recipe has nothing special except that it has a sweet filling and becomes a 'more than special breakfast' in a lazy morning........the khoya is roasted in a deep kadhai till brown ......
so that it can be preserved for a longer time , some sugar to taste and dry fruits are added and the mixture is kept in a container for such lazy mornings when you do not want to do anything n want a 'more than special breakfast'.......( if you keep some whole wheat roti dough in the fridge)..............just stuff, roll and fry the paratha in ghee ( nothing else will do) ..... and be ready for some smiles........
